Pineapple and Spice Mocktail
- 1 cinnamon stick
- 5 cloves
- 2 packets of black tea (or other)
- 15g fresh ginger
- Pineapple peel and core
- 50 g sugar
- 1.5 liters of water
To decorate:
- Mint leaves
- Fresh gooseberries
Preparation:
- Boil the cinnamon, cloves, tea, ginger, pineapple rind and sugar in a pan with the water for 4 minutes.
- Allow to cool, so that the infusion is better, and then strain.
- Serve with ice, mint and currants.

Braised Pineapple and Feta Cheese Canapés
- 10x pineapple cubes 15g
- 20x cubes of feta (or buttery cheese)
- 2g pink peppercorns
- 1g chopped chives
- 10 skewers or sticks
Preparation:
- Brown the pineapple cubes in a frying pan without any fat.
- Place one pineapple cube and two cheese cubes per skewer
- Season with ground pink pepper and chopped chives.
