Ensuring sustainability in all aspects of the business, as well as in the social and environmental aspects, while maintaining competitiveness, a focus on increasing customer satisfaction and the position of market leader in the on-board catering service at Lisbon Airport. The commitment to technological innovation, as well as the establishment of partnerships and processes to reduce waste and energy resources and also the treatment of waste and water are some of the areas of activity that help to improve Cateringpor’s environmental sustainability. The strong commitment of all professionals to implementing new processes and adopting new technologies, as well as collaboration with strategic partners, makes it possible to reduce internal inefficiencies and increase the agility of the operation, while at the same time increasing productivity and reducing waste.
Water monitoring and treatment
The water used in the production process, i.e. all the water from the kitchens and pantries, is treated in the Wastewater Pre-Treatment Plant (EPTAR) installed on Cateringpor’s premises.
This EPTAR guarantees compliance with the parameters relating to oils and fats set out in the legal requirements governing Cateringpor’s activity.
The EPTAR is equipped with two flotation machines whose main functions involve pre-separating waste, controlling and removing odors, removing suspended solids and reducing the organic load.
It is in this equipment that oils and fats are separated from the water which is then sent to the effluent.
This equipment is continuously monitored using real-time monitoring software and analytical control, particularly pH, to guarantee the effectiveness of the treatments.
In addition, EPTAR has a chlorination booster system, with automatic chlorine dosing in the water tank, guaranteeing the quality of the drinking water.
Monthly water quality analyses are carried out in accordance with current legislation, ensuring the compliance and safety of our process.
Reducing waste
With a total of 9,424,071 meals served in 2023 and around 6 million served by the end of August 2024, Cateringpor is one of the largest meal-producing companies in Portugal.
Maintaining its status as the market leader at Lisbon Airport requires recruiting the best kitchen professionals, but also paying extreme attention to quality and food safety standards.
All the work carried out in these areas reinforces customer confidence in Cateringpor’s products and keeps standards at their highest.
As a major producer of meals in Portugal, we are constantly concerned about food waste.
In order to prevent food waste and ensure that products that are not used in the production of meals for customers are consumed without waste, a product reallocation circuit has been implemented.
This circuit ensures that all products identified as surplus, i.e. unnecessary for production and of optimum quality for consumption, are sent to employees for donation or to increase the supply in the company canteen.
An example of this type of product is fresh fruit.
Waste treatment
The installed production capacity allows Cateringpor to deliver more than 33,000 meals a day to customers at Lisbon Airport.
Therefore, the management and treatment of waste generated throughout the production process is a major concern for the company’s environmental sustainability.
In 2023, Cateringpor implemented the Organic Waste Flow, which is constantly being improved and made more effective every day.
Securing strategic partnerships with organizations specializing in this area allows Cateringpor to carry out more efficient waste treatment.
The organic waste is collected by Blueotter and then sent to Valorsul’s Organic Recovery Station.
The organic waste is then mixed and sent to Anaerobic Digestion equipment (treatment in a closed environment in the absence of oxygen) associated with “Composting”.
This process produces electricity from the biogas generated and produces high-quality compost for use in agriculture.
The end product is a natural fertilizer that provides organic matter to agricultural soils and helps retain water from irrigation and rainfall near the roots of plants.
