Watermelon rind

Watermelon is one of the most popular summer fruits. The rind of the watermelon represents around 30% to 40% of the total weight of the fruit and is usually wasted. This recipe helps to avoid total waste of the rind by providing an idea for incorporating the white part of the rind into a delicious salad with shrimp and other julienned vegetables.

Recipe: Watermelon Rind and Shrimp Salad

Entry for 4 people

Ingredients:

  • 320g julienned watermelon rind
  • 120g julienned carrot
  • 40g julienned red onion
  • 8g celery leaf in chiffonade
  • 4g Coriander leaf
  • 12Un Boiled shrimp
  • 12ml Lime or lemon juice
  • 40ml olive oil
  • 2g Salt

Preparation

  1. Remove the green part of the melon rind. Cut into strips, as thin as possible
  2. Slice the carrot as thinly as possible
  3. Cut the onion into very thin half rings and then in half.
  4. Cut the celery into strips, as thin as possible
  5. For the vinaigrette, mix the olive oil, juice and salt. Set aside.
  6. Mix all the vegetables and season with the vinaigrette
  7. Serve with the peeled prawns on top

Serving tip

As an alternative to the vinaigrette, you can serve it with a herb mayonnaise and chopped cashews, or a sweet chilly sauce and lime.
